Sprouting, soaking wheatberries (or any seed) "pre-digests" the grain, allowing the nutrients to be more easily assimilated and metabolized. This is an age-old approach practiced in most traditional cultures. Sprouting begins germination, which increases the enzymatic activity in foods and inactivates substances called enzyme inhibitors.

Sprouting also causes a beneficial modification of various nutritional elements. According to research undertaken at the University of Minnesota, sprouting increases the total nutrient density of a food. For example, sprouted whole wheat was found to have 28 percent more thiamine (B1), 315 percent more riboflavin (B2), 66 percent more niacin (B3), 65 percent more pantothenic acid (B5), 111 percent more biotin, 278 percent more folic acid, and 300 percent more vitamin C than non-sprouted whole wheat. This phenomenon is not restricted to wheat. All grains undergo this type of quantitative and qualitative transformation. These studies also confirmed a significant increase in enzymes, which means the nutrients are easier to digest and absorb.

It is best to sprout your seeds and grain! You get more value for your money.

Anne Wigmore is total proof of how one can rejuvinate themselves from the healing nature of this gentle food. She healed herself from cancer, gangreen etc, and at the age of 79 she had the body of a 30 year old. Doctors were amazed at her. I have read her books. All her grey hair turened back to it's naturel color and she had the energy of when she was a teenager.... it's just too bad she was found burned to death in he rgarage, otherwise she would have been living proof to the healing and rejuvinating power of live foods, which consisted of ALOT of wheatgrass. Our body is continually rejuvinating itself cellularly. It is very possible to heal most every ailment. The medical profession are taught from books that are very limited in preventing and treating disease.

You should buy her book on Wheatgrass. You will be absolutely amazed.

Hi Julie. In general, you are correct about juicing (esp. carrots) but, this thread is about wheatgrass which I cannot use because I'm a blood type O. For me, it is a metabolic inhibitor and can make me more susceptable to disease. If you going to grow your own grass for juice, I recommend Kamut. It is ancient wheat and is healthier in every way. Also, enzymes are deactivated in the stomach and reactivated in the small intestine. All enzymes are proteins and we use them just fine. There are no deleterious effects from enzymes unless you eat too much pineapple and burn your mouth. However, if you are allergic to the source of the enzymes you would have a problem. They obtain many enzymes from fungus. Who told you that too many enzymes were bad? It surely wouldn't be as bad as not enough enzymes. That's for sure. The other mostly unknown benefit of raw foods are biophotons which I will start a thread about. Aloha, Lamaku.

The anti-nutritional substances are destroyed in cooking. Traditionally, Asian food/bean sprouts are most often cooked before serving. And, if you are not deterred by the fact that you are eating something that no animal in nature will touch....then think about three other things about sprouts.....you put a great deal of alfalfa/radish/brocolli/sunflower/wheat seeds in a jar to sprout them....if you were to grow these seeds into mature plants, imagine how much food you would produce....but we as Americans don't think twice about over consumption and use these same sprouts for just one salad. And.....sprouts are grown in a glass jar in water in your kitchen, far away from Earth and her nutrients.....and......they have stopped selling sprouts at our local health food store because salmonella bacteria grows very easily on them.

Well.....juicing is not healthy as we are led to believe.
And it is not sustainable. What you get when you juice a vegetable is the sugars.
That feeling you get after drinking freshly juiced veggies is a sugar high. More sugar in a glass of carrot juice than in a coke.
And juicing is not sustainable.....we grow a plant, like carrot, juice it, throw away/compost the fiber....we juice lots of carrots this way.
This is a product of our over consuming American culture....growing carrots and cooking them into soup and eating every bit of them is
the most healthy and sustainable....if you were to sprout grain and then grind and cook that into bread, that would be healthy.
I see wheat seeds grown into grass, juiced and drunk. These seeds could grow into wheat plants that would produce many more wheat seeds.
That is sustainable. Much of the problem with wheat is that it is rancid......I buy organic wheat berries, grind them myself right before I make bread, and soaking the wheat overnight is beneficial also. Here is a link to Weston A. Price Foundation website and a bit about the wheat.
http://www.westonaprice.org/foodfeatures/be_kind.html
And.....all the talk of enzymes and raw food and how there are these great enzymes in raw food that help us so much....well, this is hype, not true actually.....the enzymes in raw food/wheat grass may be there but we don't really use them very well.....and too many enzymes from outside sources can be detrimental.
If you eat mostly raw or all raw....your brain cells don't get enough nutrients and begin to die. Do this long enough and you will become stupid.

Wheat grass feels like it is good for me, and bread, even homemade from ground wheat, does not feel good to me anymore. I know everyone is different and things are always changing too, but how a food or medicine makes me feel is the single most important piece of evidence to me, to tell if something is beneficial of not.
julie i dont see how you can say this......could you explain a little more how you came to this conclusion? i am particularly confused about the part where you state wheatgrass juice is hard on digestion

wheatgrass is packed full of beneficial enzymes that actually help our digestion.

cytochrome oxidase, an antioxidant required for proper cell respiration, lipase a fat-splitting enzyme, protease a protein digestant, amylase which facilitates starch digestion, catalese, which catalizes the decomposition of hydrogen peroxide into water and oxygen in the blood and body tissues, peroxidase which has an action similar to catalase on a cellular level. transhydrogenase an enzyme that aids in keeping the muscle tissue of the heart toned. and superoxide dismutase (slows aging of the cells). these enzymes help to detoxify pollutants in our bodies. these crucial enzymes are what help us digest our food.

wheatgrass also has the ability to stimulate the production and natural repair of human reproductive sperm cells and dna. for more info check out dr. yasuo hotta's studies.

wheatgrass is packed full of vitamins and minerals...specifically high amounts of vitamin c, vitamin a, b vitamins, and vitamin e, calcium, iron, sodium, potassium, and magnesium.

of all the components in wheatgrass, chlorophyll is one of the most important. it is soluble in fat particles thus the chlorophyll gets moved through your lymphatic system to help break down fats, proteins etc that can accumulate there.

Juicing wheatgrass is like juicing any other vegetable, it is not sustainable and is very hard on digestion.
I suggest buying organic wheat berries, grinding them yourself into flour and making bread, the ancient and holy way to use this plant.

My landlady gave me a hit of wheatgrass juice and i got such a high off of it i decided to get into it mycellf. I went to the health food store and bought some wheat. I went to the hardware store and got some plastic planting flats, and i used regular soil in one and compost in the other to see which did better. They've both grown ok, but of course the compost one has grown better. I've just been using a compact fluorescent for light and that seems to be working fine.

I bought an old juicer on ebay, which was a mistake as it was worn out. I bought another from these guys that i'm very happy with. I got the better of the stainless steel hand powered juicer.
