A Question About Herbal Vinegars

Hey guys, I just saw this lovely cideo on YouTube all about making Herbal Vinegars/ Yellow Dock Vinegar in particular:

However, it raised a number of questions I thought I would raise here. Now, I e-mailed the folks at HerbMentor.Com, but...they seem to view Herbalism as a money-making venture and generally don't seem to want to answer questions unless by literal subscribers 9as in money is required) on their website's Forum:

* Why would I not want to use white distilled vinegar when making an herbal vinegar? That's the only kind I'm really familiar with; I use it as a hair rinse every month or so (yes, guys should always use a hair-rinse, too! *G*), or as an ingredient in a homemade salad dressing when emulsified with an oil. Would there be a reaction with the vinegar and a metal lid?
* Why, when making an herbal vinegar, should one use only a plastic lid instead of a metal lid, such as those that come with standard canning-type jars that are so readily available?

And, perhaps more importantly:

* Would a simple vinegar infusion be able to extract the minerals from a root? I was always under the impression (and i can't remember WHERE I read this) that vegetational minerals are so much like "rocks" that to extract them really requires a decoction process in boiling water. Was I mistaken? if a decoction is not necessary, than how is a vinegar (or even an alcohol, like vodka) able to fully extract the nutrients and minerals contained within roots?

    As far as why to use a plastic lid instead of metal with vinegars, i believe it is because the vinegar can corrode the metal (not sure if corrode is the correct word) which will waste not only your vinegar and herb, but the lid as well.

      Fascinating! You know, i'm surprised that all of the books on herbal preparations that I own which discuss herbal vinegars has never mentioned something that would appear, then, to be common sense. :o) Well, not to me, of course. But, if any of them *had* made a vinegar with a metal lid, than surely they would have noted any rusting.

        white vinegar, is not normal. Its chemically made, not naturally made, like good brown apple cider vinegar. stop using that chemical vinegar immediately! haha. its gross. vinegar will absorb hair improving minerals for sure, and more in cider vinegar, but if the hair lacks strength and such from lack of minerals - eating the right foods will remedy that.

          Hello,
          Long time since I visited here......this subject draws me in.
          I use apple cider vinegar, organic and raw. I infuse the vinegar for 6 weeks or longer.
          Minerals are little rocks so letting them soak a long time in vinegar draws them out.
          If you boil something in water for a long time, it does the same thing.
          The metal lid thing is because of the acid in the vinegar, it starts to disintegrate the metal top.
          You can put a little piece of plastic wrap over the jar and then put the metal lid on.
          Right now.....hawthorne berries, dandelion root, rose hips, burdock root....are good choices for vinegar.
